![]() | 16.79 | Brassfield 2004 Round Mountain Vineyard Zinfandel - Red Wine Red Wine by Brassfield from North Coast, California. This five acre Zinfandel block was planted in 1998 on the steep north facing volcanic slopes at the foot of Round Mountain volcano in High Valley. The rocky shales and volcanic sands provide excellent drainage and create smaller production yields, while the northern exposure of this vineyard allows for longer maturation and fruit intensity in the grape berries. The wine was aged in small oak cooperage for 16 months in equal portions of French, American and Hungarian oak. A small percentage of Syrah from the neighboring vineyard was blended with this Zinfandel to improve structure and add some additional depth to the finished wine. This vintage shows a sweet, ripe cherry pie nose with well integrated toasty oak notes. A hint of cinnamon and rhubarb are also present with smooth and soft tannins. |

George Wyndham became the father of Australian Shiraz after planting Australia's first commercial Shiraz vineyard in 1830. His innovative spirit is a proud legacy that endures to this day at Wyndham Estate. Selected parcels from our most outstanding Shiraz blocks were harvested at optimum maturity, gently crushed and then fermented in small, static fermenters and inoculated with a neutral strain of yeast. Fermentation temperatures were moderate, and over extraction of tannins was avoided by careful monitoring during daily tasting and regular analysis. After pressing, the wine was transferred into selected new and one year old barrels for up to 16 months. After this time each barrel was tasted by winemakers prior to blending and any not up to exacting standards were culled. This wine has undergone minimal filtration to minimise stripping of flavor. Dark cherry color with bright purple hues. Spicy chocolate mint nose with lifted violets and vanilla bean. Dense ripe blackberry fruits with a luscious mid palate and a velvety tannin finish. |

Our Deux Albion vineyards have been vinified exactly the same way as the Gigondas wines. The cooking book says: crush and blend the grapes, leave the fermentation begin naturally, keep going adding cold grapes consistently. Then you'll control your temperature fermentation without working too much. If you are lazy, be clever. Leave the indigenous yeasts get exited by mixing them up. As you want to keep the delicate aromas, don't leave the yeasts become too hysterical by cooling down all the stuff. Don't burn your aromas. Don't ferment too hot. When you get to the end of the cooking, don't stop it, leave it keep going gently as long as possible. Take your time. It has to be slow. Then gently rack the wine and softly press the grapes. Taste very often. Taste several times per day. Taste again. Look for your own pleasure, then you'll get more chances to give pleasure. Serve at 16?C with a nice smile.
